NoMa Sour



  • ¾ oz of lemon juice
  • ½ oz of maple syrup
  • 1 egg white
  • 2 dashes of Angostura
  • 3 oz of St.Regis Cabernet Sauvignon


  1. In a shaker filled with ice, mix all the ingredients except the wine for 3 to 4 minutes
  2. Filter through the sieve
  3. Stir again to make the mixture foam well
  4. Pour into a cup and float the wine
  5. Add the lemon zest taking care to squeeze the oils on the top of the cocktail to add its aroma
