Après Neige Granita Recipe
Makes 4–6 small servings

Ingredients:

(For the granita)
- 2 cups pink grapefruit juice or blood orange juice (fresh or high-quality bottled)
- ¼ cup freshly squeezed lemon juice
- 2–3 tbsp sugar or honey (adjust to taste)
- ½ cup water

(To serve)
St. Regis Sauvignon Blanc, well chilled

Instructions:

1- Prepare the granita base
In a small saucepan, gently warm the water and sugar just until dissolved. Let cool completely.
Stir the syrup together with the grapefruit juice and lemon juice.

2- Freeze in the snow
Pour the mixture into a shallow metal or glass tray.
Place the tray securely into a clean, undisturbed patch of snow outdoors.
Leave until fully frozen, about 1½–2 hours depending on temperature.

3- Scrape
Using a fork, scrape the frozen mixture into soft, fluffy crystals. Return to the snow briefly if needed to maintain texture.

To serve, spoon the granita into chilled coupe or cocktail glasses and finish by slowly pouring chilled Sauvignon Blanc over the granita until the glass is nearly full.
